Heather Honey

Description
The Heather plant is a typical element of the evergreen Mediterranean scrub. The name derives from the Greek Erikein, to break, in allusion to the fragility of its branches. It is a rather difficult honey to produce in purity due to the precocity of flowering in a period in which the bee families are not always sufficiently developed to exploit the nectar and therefore produce honey. Fragrance: fresh, caramel or cooked sugar. Flavor: Medium sweet with a slight bitter hint, of crème caramel, toffee, licorice.
Pairing
It goes well with tasty cheeses and served raw with pork meat. Excellent in the preparation of infusions and as a table honey.

Keep in a cool, dry and protected from light place.
