Description
Eucalyptus honey is mainly produced from two distinct plant species: Eucalyptus Camaldulensis (which blooms in July-August) and Eucalyptus Occidentalis (which blooms in September). The honey produced in summer is lighter in color and has a more delicate taste, while the one produced in September has more marked characteristics. Eucalyptus honey belongs to the group of very aromatic honeys with an intense aroma reminiscent of licorice. The crystallization is fine and compact, very pleasant on the palate. The Eucalyptus plain is originally from Australia and was introduced in Italy in the nineteenth century for reforestation in Mediterranean environments. The specification Camalulensis derives from the name of the Conce di Camaldoli who in 1832 made available an estate where the first specimens imported into Italy began to be cultivated. Fragrance: of dried mushrooms, caramelized. Flavor: Slightly sweet, like toffee, licorice.
Pairing
Excellent with all types of goat cheeses, especially fresh ones and pecorino. Suitable for sweet and sour sauces and to flavor meat and fish dishes.
