Cominciamo da una doverosa premessa. La scienza degli abbinamenti tra miele e infusi è ancora tutta da sviluppare. Esiste poca letteratura in merito e, in generale, si tende a sottovalutare l’apporto aromatico del dolcificante a favore dell’analisi sensoriale data dagli ingredienti della tisana o dalla varietà del thè. There is only a little literature of merit on the subject, and in general, it tends to underestimate the aromatic contribution of the natural sweetener to the sensory analysis of the herbal ingredients or the variety of tea. However, honey, especially those made from a single flower, possesses distinctive and unique characteristics that that elevate it from its simple “sweetness” to make it a co-protagonist in flavour.

LEMON AND GINGER
